Pasta making: 1. Mix 1 egg for every 100g of flour. 00 flour is best, but all-purpose flour works too. 2. Slowly incorporate the flour into the eggs using a bowl or forming a classic vulcano shape. 3. Knead the dough until it is smooth and uniform, which should take about 7 minutes. 4. Let the dough rest for a minimum of 30 minutes. 5. Roll the dough using either a pasta machine or a rolling pin. A pasta machine is faster and easier, while a rolling pin provides a rougher texture, which is better for holding this simple sauce. Sauce: 1. Heat up the butter in a pan. 2. Add the shallots and cook them for 4 to 5 minutes, or until they are translucent. 3. Add the lemon zest and reduce the heat. 4. Quickly cook the pasta in salted boiling water. 5. Transfer the pasta to the saucepan with the sauce and finish cooking it there. 6.
